The balanced Cerasuolo di Vittoria Curva Minore Bio from Italy is a cuvée, organically produced from the grape varieties Frappato and Nero d'Avola. At the optimal ripeness point, the grapes for the Cerasuolo di Vittoria Curva Minore Bio are harvested exclusively by hand, without the use of coarse and minimally selective grape harvesters. After harvest, the grapes are quickly taken to the press house. Here, they are sorted and gently broken. Subsequently, fermentation takes place in stainless steel tanks at controlled temperatures. The vinification is followed by a maturation of several months on fine lees, before the wine is finally bottled.
